Dinner is the hardest time for me to eat healthy, and cooking for one person is hard. It brings me back to my grad school days where I often opted for not-so-good-for-me food because it was easier than making something for one person.
That did not end well.
And I don’t want that to happen again.
Do you have any one-person meals that you love? I’m also thinking I should try meals that I can freeze and just heat up, but I’ve never done this before…
